一、座位安排

1. 女士优先。在排定西餐座次时,主位请女主人就座,而男主人位居第二位。

2. 以右为尊。在排定座次时,以右为尊。

3. 面门为上。面对正门者为上座,背对正门者为下座。

4. 交叉排列。男女交叉排列,生人与熟人交叉排列。

5. 美国餐桌礼仪从入座、拿取餐巾、开动、取用餐具、离席,皆有自成一套的规矩,而其中座次与餐具安排,主人会于餐前准备妥当,无需费心。但应当熟悉餐具使用顺序及位置功能,以免拿错。

3. 盘子旁边摆刀、叉、汤匙等。依用餐顺序:前菜、汤、料理、鱼类、肉类、视所需由外而内取用。

4. 左手边是面包盘和奶油刀,装饰盘对面则放咖啡或吃点心所用的小汤匙和刀叉。

5. 餐具之取用系由外而内。但有一例外,即当沙拉与主菜同时上桌时,沙拉所需使用之刀叉乃放在最靠近餐盘的位置,即主菜刀叉的内侧。沙拉盘则在主菜所用之刀叉的左方。(主菜叉子位置在餐盘左方、餐盘右方为主菜刀子)。

6. 如没有沙拉盘摆于桌面,则沙拉用之刀叉会随沙拉上桌时一并送上。另一例外,即吃蚝(oyster)所用之叉子在餐盘右方餐具的最外侧,汤匙的位置在所有刀子的右方,最外者为喝汤用,介于刀及汤匙间的小匙,则为吃甜点(dessert)之用。而甜点叉则在餐盘最左方。但平常为避免混淆,则会将吃甜点所需之餐具置于餐盘上方,以示区别。

7. 坐定后必须注意女主人的暗示。当女主人打开餐巾放在膝上,表示开动;而女主人将餐巾取下放在桌上,则表示餐宴完毕。餐宴未结束时,即使已填满肚子,也应继续进餐,直到餐会结束。餐巾正确的位置应放在膝上,而非夹在衣领或衣带间。用完餐后,餐巾应放在餐盘的左方,如餐盘已移走,则放在正中央,切勿将之揉成一团。餐巾的用途乃揩嘴之手,尤其是喝饮料前最好能揩一下嘴,以免杯子尽是油渍。餐巾不可用来当桌布,擦去桌巾的污渍。如不小心弄脏了桌巾,应向主人道歉。

8. 餐具取用由外而内,切用时或以法式之左手拿叉,右手拿刀,边切边用。或为英美式,右手拿刀,左手拿叉,切好后,改以右手拿叉取用。美国较偏好后者,但法式亦为美国人所接受。谈话间有肢体表情或传菜时,应将刀叉放下,切不可持刀叉于空中挥动。刀叉用完后,应横放于在餐盘中央,而非盘边或餐桌上;放置方式刀口朝己,叉口朝左,以便取走之安全性。餐盘用完后,不应往外推,留在原处即可。

三、刀叉的使用方法

1. 拿刀叉的手是固定的,右手拿刀,左手拿叉。

3. 叉子不只用来压食物和叉东西而已,也可以用来舀豆子和米饭。

4. 如果用左手拿叉不方便,也可以使用右手,但必须先把刀放下。

5. 用餐中,如有事而要离席时,必须把刀叉摆成八字型放在餐盘上。

6. 用餐结束后,则是平行的'斜放在五点钟位置。

四、喝汤的礼仪

1. 西式料理用餐时,以不能发出声音为一大原则。如果在喝汤时发出声音就是违反礼仪。日本人认为汤是饮料,而西式料理则认为汤是食物,是用来食用而非饮用。

2. 食用装在有双耳的汤杯中时,为了测试汤的冷热程度,可以使用附带的小汤匙先试一口。使用后的小汤匙可以放在靠近身体这一边的底盘上,不可置于汤杯中。试过汤的温度后,可以用双手拿着汤杯耳,把汤杯端到口边直接饮用。至于汤中的食物,则可以用汤匙来舀食。

3. 没有汤耳的汤盘,要用大汤匙来舀食。拿汤匙的姿势像握铅笔一样,由内而外侧舀食。由内而外舀食是属英国式,反之则是法国式,日本一般采用英国式。把汤倒入口中时,不可发出声音,然后再用没有残留汤的汤匙,由自己的面前往外舀汤进食。

4. 使用完毕后,把汤匙放在靠自己身前的底盘上,或是放在盘中。谨记要把汤匙的柄放在右边的原则,而汤匙凹陷的部份必须向上,汤杯与汤盘都是如此。用汤时,不可噘起嘴来用力把汤吹凉。

五、食用面包的礼仪

1. 放置面包的位置一定是置于主菜的左侧。
